Mix the flour and 100 grams of sugar (reserve the rest for the filling) with the butter and work with the fingertips. Add the water and stir again without touching much, so it does not get hot. Wrap in transparent paper and let cool 15 minutes in the fridge.

Meanwhile, we preheat the oven to 180º C, with heat up and down. We peel, descorazonamos, and laminate the apples. Sprinkle with the juice of half a lemon. Add the refined cornmeal, the remaining 40 grams of sugar, and stir well until integrated.

We spread the dough on a sheet of vegetable paper and transfer it to a baking sheet. We place the apple on the surface, without reaching the edge and leaving a mass margin of about four centimeters that we bend inwards, covering part of the apples.

Paint the dough with beaten egg and, optional, sprinkle with sugar to taste and a little cinnamon. Enter in the oven and cook for 25-30 minutes or until the edge is golden and crispy. Remove and let temper a few minutes (or cool completely) before serving.

With what to accompany the apple galette

We can take the hot apple galette, fresh out of the oven, and accompany it with a scoop of vanilla ice cream. The warm and cold contrast is magnificent. We can also serve the galette with a splash of English cream, a little crème frâische, and Greek yogurt.
